If you have ever wondered what the most expensive coffee is, it is found, picked, roasted and sold in the Philippines. It is one of the most coveted among coffee connoisseurs all over the world. Cafe Alamid has a price tag of up to US$1,000 per kilo.
To whom do we owe the interesting flavor of these coffee beans? Cafe Alamid takes its name from the Palm Civet (Paradoxorus Philippinensis), locally known in the Philippines as Alamid. An Alamid starts off by picking the ripest and finest berries by smell.
Palm Civets eat the beans but are not able to digest the beans and they excrete them in the morning. The miracle happens inside their digestive tract. The chemical structure of the beans is changed due to the process of fermentation from the stomach acids and enzymes of the Alamid.
Civets thrive all over the Philippines because of its lush forests. Majority of them are from Malarayat, Lipa, Batangas and Mt. Matutum, General Santos, South Cotabato. They are exported to Taiwan, Korea, Japan, Australia, Italy and the United States.
The Philippines produces up to 1.5 tons a year and are very particular about coffee quality and environmental protection. They say it has hints of chocolate, cinnamon and roasted nuts. It is described as a designer / boutique coffee in taste and aroma.
